Potato, Leek, Lentil, Pancetta Soup

good size Potatoes, diced • Leeks cleaned well. Slice down the middle and cut into thin half moon slices • chunk of Pancetta (I used “hot”) • Garlic • Orange Lentils (Dry) • Onions coarsely chopped • Vegetable Stock (or chicken) • Water • Salt to taste (You can add pepper) • Vegetable Oil • Chives and dry Parsley
