Ingredients for kadai masala • coriander seeds (can reduce to 1.5 tbsp) • red chilies Kashmiri (or less spicy variety) • onions (cubed, 2 large) • capsicum • tomatoes(chopped & deseeded 2 large) • red chilli powder (optional, just for colour) • garam masala • kasuri methi or dried fenugreek leaves • salt as needed • cashew nuts (can substitute with 3 tbsp cream) • ginger garlic paste
