These look great! I’ve been looking for some gluten-free recipes because I have friends with celiac disease. Do these cookies bake up soft and chewy or crispy?

Hey Chris, glad it's useful for you! These are not chewy though soft/airy inside and crispy outside. Still working on how to archive the chewy effect, maybe change to dark brown sugar, i dont know, let's see.
