Ingredients

4 servings
  1. 3-4parsnips peeled and diced
  2. 3-4carrots peeled and diced
  3. 2-3tomatoes roughly chopped
  4. 750 mlvegetable or chicken stock
  5. Salt & pepper
  6. Teaspooneach of Coriander and cumin
  7. Teaspoonmustard seeds
  8. Olive oil
  9. leavesCoriander

Cooking Instructions

    Place all chopped vegetables in a baking dish/ tray. Sprinkle over with generous dollop of olive oil and the spices and mustard seeds. Bake in 180 degree oven for 30-40 minutes

    Put in blender with some of the stock and blend for couple of minutes till smooth

    Transfer to stove top, add rest of stock and bring to boil

  4. 4

    Serve with sprinkle of coriander / dhania leaves and a piece of toast with cheese👍
