You could try replacing:
Chicken -> Tofu or Seitan,Oyster sauce -> “Vegetarian Oyster sauce” available in some super markets alternatively soy sauce or hoisin sauceFish sauce -> There is a whole bunch of recipes about for Vegan Fish sauce replacement.
