Ingredients

Serves 2 servings
  1. 2tlayudas (large Oaxacan tortillas)
  2. 1/2 cuprefried black beans (about 120 grams)
  3. Quesillo (Oaxacan string cheese), to taste
  4. 1/4 headcabbage, shredded
  5. 1/2 cuppork lard or vegetable oil (about 125 grams)
  6. Salsa, to taste
  7. Cecina (thinly sliced cured pork), to taste
  8. Tasajo (thinly sliced beef), to taste
  9. Tomato, to taste
  10. Guacamole, to taste

Steps

  1. 1

    Spread one side of each tlayuda with lard and refried beans, then heat on a griddle or skillet.

  2. 2

    Once heated, add quesillo, cabbage, and tomato.

  3. 3

    Serve on a plate with guacamole, salsa, and your choice of cecina or tasajo.
