Wash and chop mushrooms into small pieces. Wash and chop octopus into small pieces. Fry onions, carrots and celery in a little oil

After a few minutes add the mushrooms. Cook for 2-3 minutes more. Then add octopus and turn up the heat. Add wine and let it evaporate

Turn down the heat to low. Add tomatoes, stock cube and glass of water. Stir and simmer for about an hour. Half way through cooking, bring a pot of salted water to the boil and cook pasta according to instructions. Drain pasta al dente, add to sauce. Mix well

Serve with fresh parsley and the rest of the wine 😀
