Ingredients

10 minutes.
4 servings.
  • 3eggs
  • 1 cupshredded spinach
  • 1 tablespooncarrot strips
  • 1 tablespoontomato strips
  • 1/2 cupthin potato slices
  • 1 teaspoongrated cheese
  • 1 teaspoonblack pepper powder
  • 1 pinchsalt or as per taste
  • 1 tablespoonchopped coriander leaves
  • 1/2 cuponion slices
  • 1 tablespooncream
  • 2 tablespoonolive oil
  • For green chutney:
  • 1 cupcoriander leaves
  • 1green chilli
  • 1 teaspoonchopped ginger
  • 1 teaspoongreen onion
  • To tasteSalt
  • 1 teaspooncumin powder
  • 1 tablespoonchopped onion
  • 1 teaspoonlemon juice
  • 1 dashextra virgin olive oil

Steps

10 minutes.
  1. 1

    Heat a non stick pan,add olive oil and saute onion slices for 30 seconds.Arrange potato slices over onion,add salt and alittle water.Cover and cook for 2 minutes on low flame.

    Now potatoes are tender.Add shredded spinach,carrot and tomato.cover and cook for 1 minute on low flame.

    Meanwhile beat eggs,add cream,black pepper powder,salt and cheese.Whisk and pour over vegetables.cook for 2-3 minutes on low flame.

    Meanwhile take all the ingredients of chutney in a grinding jar,add a little water and grind to a paste.Take out in a cup.Chutney is ready.

  5. 5

    Now flip the frittata and further cook for 2-3 minutes on low medium flame till golden.Take out.Frittata is ready to serve.
