Watermelon rind curry popularly known as 'Tarbooz ke chhilke ki sabzi' is most popular dish from Rajasthan State of India.
I love this part of watermelon more than red juicy flesh so I prepare curries and preserves using this. For now sharing a delicious tangy dish with a hint of sweetness.

Watermelon rind curry popularly known as 'Tarbooz ke chhilke ki sabzi' is most popular dish from Rajasthan State of India.
I love this part of watermelon more than red juicy flesh so I prepare curries and preserves using this. For now sharing a delicious tangy dish with a hint of sweetness.
Steps

Chop the white portion of watermelon and keep aside.

In a pan heat up ghee, add mustard and cumin seeds, when they splutter add asafoetida, chopped green chillies and curry leaves.

Add turmeric, coriander and chill powder in the oil keeping flame at the low.

Shake the pan, add 1 tbsp water, stir.

Add ginger garlic paste and saute for 30 seconds.

Add chopped watermelon rind and salt, mix well and let it cook in the covered pan for 8-10 minutes.

Curry will leave some water and ghee will start floating on top. Add dry mango powder and some coriander leaves. Cook till pieces are soft but not mushy.

Serve it as a side dish with your meal.
