Cooking Instructions
- 1
Preheat oven to 450 degrees.
- 2
Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.
- 3
Drizzle a sheet pan with olive oil. Place tender potatoes on the sheet pan, leaving plenty of room between each potato.
- 4
With a potato masher, gently press down each potato until it slightly smashes. Rotate masher 90 degrees and repeat. Drizzle or brush the tops of each potato with more olive oil.
- 5
Sprinkle with salt, pepper, herbs, and parmesan.
- 6
Bake for 20-25 minutes until golden brown and sizzling.

I had some red potatoes that were a little on the small side. I was going to make “Cottage Fries” and decided against it. I thought, “Why don’t I just smash these damned things and fry them whole”? It worked out great, nice and crispy. Karl -
