Steps

Place a strainer above a large bowl to collect the Whey or excess water drained from the curd. Place a clean muslin cloth over the stainer. Add curd to it and bring all the edges together. Squeeze out the excess whey from the curd.

Squeeze as much as possible. This is done by mixing the curd placed in the cloth with a spoon and again squeezing it. This process is repeated at least 3 to 4 times.

Now transfer curd into another cloth and place it on stainer. Keep some weight over it. Place it in the fridge for 45 minutes to an hour. Place a vessel below the stainer. In One tbsp warm milk soak the saffron Strings.

Now thick curd called Chakka is ready after all whey is drained. Now in small mixer jar add sugar and cardamon. Grind it to a fine powder.

Now add powdered sugar to the chakka and mix well.

Add soaked saffron to this and mix well until smooth. Garnish the shrikhand with chopped badam and cashew nuts.
