Mushrooms in white wine
An experiment !
Steps

Wipe (Don't wash) mushrooms with damp cloth/ kitchen roll, if large cut in half or quarters.

Place wine and olive oil in a saucepan, add mushrooms, cover with a lid and cook over a low heat until mushrooms soften. About 5 minutes.

Season to taste with salt and pepper, stir through. Cook for another 2 minutes. Check taste.

If there is a lot of liquid remove mushrooms, reduce liquid over high heat until about 2 tablespoons remain, remove from heat, add mushrooms and stir through.

Serve with fish, steak or chicken or allow to cool, chill and serve as a starter.

Picture shows bulk ready for freezing, as I got 2 lb mushrooms at bargain price !
