First, take 2 cups of chickpeas and soak them overnight. In the morning, rinse them well, then cook them in a pressure cooker with water, salt, and a pinch of baking soda. Cook until you hear two to three whistles.

Turn off the heat and drain the chickpeas using a strainer. In a pan, heat 2 tablespoons of oil. Add cumin seeds and a pinch of asafoetida, then add dried fenugreek leaves. Sauté the onions until slightly golden, then add tomatoes, turmeric, and salt. Cook until well blended, then add the chickpeas, turmeric, and salt. Mix everything well and sauté.

Add vegetable masala and sauté again. Mix everything thoroughly, then add ginger and chili. Sauté, then add Kashmiri chili powder and a little water. Cover with a lid. After a while, add garam masala and cilantro, mix well, and finally turn off the heat.
