Fried milk / Leche frita

Add 3 cups of milk in a pan and let it simmer. Then add the cinnamon stick, lemon peel, sugar and vanilla essence. Boil it for some time.

In the mean time mix the cornstarch with that 1 cup of milk. Whisk properly make sure no lumps are formed.

Remove the cinnamon stick and lemon peel from the boiling milk.

Add the cornstarch to the hot milk and put the flame on low-medium heat stirring it constantly until the mixture thickens.

Once it becomes slurry like and sticks to the spatula, it's done. Turn off the oven.

Take a vessel fully greased in butter/oil. Pour the mixture in the greased container and chill for at least 3 hours.

Take it out and cut into desired pieces when chilled.

For covering, beat 2 eggs in a bowl and take breadcrumbs in a plate. Dip the chilled milk pieces in egg and then coat in breadcrumbs.

Shallow fry all the pieces in white oil.

Mix the granulated sugar and cinnamon powder and cover the pieces in it.
