Mix the all-purpose flour, yogurt, baking powder, and cornstarch together. Add a little more than 1/4 cup water (about 70 ml) and turmeric for color. Make a smooth batter. Cover and let it ferment for 5-6 hours.

Heat a deep pan over medium heat and add pure ghee. Once the ghee is hot, fill a plastic squeeze bottle with the batter and pipe out spiral shapes to form jalebi.

Combine 2 cups sugar and 1 cup water in a saucepan. Heat and cook until you get a one-string consistency syrup. Add ground cardamom and saffron strands.

Dip the fried jalebi in the hot syrup. After 2 minutes, flip them and let them soak for another 2 minutes. Repeat with all the jalebi. The syrup should remain hot. Remove the jalebi from the syrup and place on a plate. Garnish with chopped pistachios and serve.
