Ingredients

4 to 5 persons
  1. 10-12Small brinjal
  2. 2-3Onions medium
  3. 2-3Tomatoes medium
  4. 100 gmspeanants (coarsely grinded)
  5. 1 tbspRed chilli powder
  6. 1 tbspDhaniya powder
  7. 1/2 tbspTurmeric powder
  8. Green Coriander
  9. 1 tbspSalt

  1. 1

    Finely chop onions and tomatoes. Mix all the powder masala, peanut powder, gurr paste and green coriander.

  2. 2

    Slit the baingan in 4 pieces (like a plus sign) but not cutting them completely.
    Stuff half of the tomatoe/onion/masala mix into the baingans.

  3. 3

    Heat the oil. Fry the remaining tomato/onion mix and the baingans for 15-20 minutes.
    Serve with rotis.
