Rajasthani Malpua are a type of pancakes dipped in sugar syrup are very delicious treat for one and all. Here I have innovated this traditional dessert into a healthy version of it. I have made theses Malpuas with Urad daal batter instead of refined flour. Do try and enjoy with your family.

Rajasthani Malpua are a type of pancakes dipped in sugar syrup are very delicious treat for one and all. Here I have innovated this traditional dessert into a healthy version of it. I have made theses Malpuas with Urad daal batter instead of refined flour. Do try and enjoy with your family.
Steps

Wash and soak overnight the Urad daal. Than blend it with fennel seeds and milk. Now add two tbsp all purpose flour into it. And add the milk for pouring consistency batter. Batter shouldn’t be too runny. Rest the batter for two hours time.

Sugar syrup_ add water and sugar in a pan. Let it boil for three mins. Add cardamom powder and saffron strands. Turn off the flame. Add lemon juice to stop crystallisation of sugar syrup.

Take a shallow pan, add ghee for frying. Once it’s hot add spoonful batter in center of the pan and turn the flame low. Flip and Fry until golden brown from both sides. Make all Malpua in the same way. Let them cool for few mins and dip an soak in sugar syrup for few mins. Take them out and Garnish with dry fruits of your choice and serve hot or cold as per choice.
