Mo's Banana Bread
Hey there fellow food enthusiasts. Welcome to Mo's Kitchen Experiments. I love to try out recipes, giving it my own twist. This is my first post, thanks to the lockdown period.
So here's the story on how this recipe came to be. One beautiful afternoon, bored as usual, I was scrolling through IG and I came across the video on banana bread. The authors topped it with groundnut! I immediately thought to myself, now that's interesting. I know many people in Nigeria love to eat their bananas with groundnut.
I have read different banana bread recipes and I found out this is one treat you can allow your creativity shine. Got some chocolate chips, Add it! Some Almonds? Throw it in! Some dates? Oh Yes! You can also get creative with the spices you add (Cinnamon, Cloves, Nutmeg, All Spice and even Cardamom)

In a separate bowl, mix all your dry ingredients

In another bowl, add your mashed bananas, oil, egg, chopped apples, flavour, raisins

Using a spatula, gently fold in your wet ingredients into the dry mixture

Make sure you oven is pre heated to 180 degrees C

Butter your loaf pan and line with parchment paper
- 6
Pour in your batter and sprinkle your chopped nuts on top
- 7
Bake for about 60 Minutes or until a toothpick or small kitchen knife inserted in the middle comes out clean
