Pineapple Jam (for Fruit Tea or Shaved Ice)

Peel the pineapples, remove the cores, and cut into small pieces. Squeeze the lemons for juice and set aside.

Place the chopped pineapple and brown sugar in a pot. Cook over medium heat, then add the lemon juice.

Continue cooking until the mixture thickens into a syrup. Let cool and set aside.

To make fruit tea, steep a black tea bag in hot water for 1 minute, then remove. Stir in 1-2 spoonfuls of pineapple jam and add your favorite fruit pieces if desired.

For pineapple shaved ice, shave ice into fine pieces, drizzle with pineapple jam, and add a little extra syrup if you like. Enjoy a refreshing pineapple ice treat.
