Ingredients

Makes 24 servin
  1. 1.7 kgpotatoes
  2. 200 gbreadcrumbs (400g if doing two coats)
  3. 100 gall-purpose flour
  4. 80 gbutter
  5. 2eggs (4 for two coats)
  6. 3 tablespoonsfinely chopped dhania
  7. 1 tablespoonsalt
  8. 1 tablespoonmilk
  9. 1 1/2 teaspoonminced garlic
  10. 1 1/2 teaspoonblack pepper

    Peel the potatoes and wash them well. Cut the potatoes in fours and boil them until soft. Add the salt and half of the black pepper as it boils. Remove from heat and add the rest of the black pepper and start mashing. Add the butter and sprinkle the minced garlic and continue mashing. Cover and put in the fridge for 2 hours.

    Remove the potatoes from the fridge. Beat the eggs and add the 1 tablespoon of milk. Assemble the rest of ingredients starting with flour, beaten eggs and then bread crumbs.

    Scoop two tablespoons of the mashed potatoes and form into a ball. Toss it lightly in the flour, roll it in the eggs and then coat it completely with breadcrumbs. I did one coat of breadcrumbs but you can do two coats. For a second coat, roll the coated potato in the eggs and coat it with breadcrumbs again.

    Place it on a lightly floured surface or one dusted with breadcrumbs and continue forming the balls!

    Heat the oil and fry the potato balls over medium heat until golden brown. This takes about 2 minutes. Toss it gently so as not to break the crumb-coat. Once browned remove and place on a paper towel for them to drain excess oil and continue frying the rest.

    Arrange your balls well on a tray and garnish with chopped dhania or green onions.
