Banana and Chocolate Bundt Cake

Banana and chocolate is a classic combination. The banana flavor is mellowed by the rich cocoa, so the riper the bananas, the tastier, moister, and sweeter your cake will be. To boost the chocolate flavor, I added 70% dark chocolate chips. For extra interest, you can mix in raisins, walnuts, blueberries, or other add-ins to the batter.
This recipe uses oat flour, which gives a more even, less crumbly texture. If you can't find oat flour, just blend rolled oats in a food processor until fine. To make this cake gluten-free and dairy-free, I used a blender to mix the ingredients (except for the baking powder and chocolate chips, which I folded in by hand with a rubber spatula).

Add the banana, eggs, oil, vinegar, brown sugar, salt, vanilla, and cocoa powder to a blender. Blend for 3 to 4 minutes until smooth.

Add the oat flour, cornstarch, and baking soda. Blend for another 2 minutes until well combined.

Using a spatula, gently fold in the chocolate chips and baking powder by hand.

Pour the batter into a greased and cocoa-dusted 9-inch (24 cm) Bundt pan. Bake in a preheated oven at 350°F (180°C) for about 30 minutes.

Let the cake cool on a wire rack. Dust with powdered sugar and serve as is, or add your favorite toppings.

For a more decadent cake, use a melon baller to make small holes on the surface, fill each with apricot jam, and top with half a strawberry.

Brush the strawberries with more apricot jam to give them a glossy finish.
