Ingredients

45-50 minutes
4 servings
  • 3boiled potatoes, roughly mashed
  • 6tomatoes, chopped
  • 1green bell pepper, chopped
  • 1/2 cupgreen peas
  • 1/2 cupbutter (about 115 grams)
  • 1 teaspoonginger paste
  • 2green chilies, finely chopped
  • 1/2 teaspoonturmeric powder
  • 1 teaspooncoriander powder
  • 2 teaspoonspav bhaji masala
  • Salt to taste
  • 1/2 cupcauliflower, chopped

Steps

45-50 minutes

    First, add the cauliflower and green peas to a pot with 1 cup of water. Cover and cook until soft. Once done, turn off the heat.

    Heat a pan and melt 2 tablespoons of butter. Add the ginger paste and green chilies, and sauté lightly. Add the chopped tomatoes, turmeric powder, coriander powder, and green bell pepper. Mix well, cover, and cook for 2-3 minutes.

    Check the vegetables. Once the tomatoes and bell pepper are soft, mash them with a masher. Add the cooked cauliflower and peas, and mash everything together while cooking. Add the potatoes, salt, red chili powder, and pav bhaji masala. Continue mashing and cooking for a few more minutes. Add 1/2 cup water to make the mixture slightly thinner, and cook while mashing until the bhaji is smooth and well combined.

    Add 1 tablespoon of butter and mix well. The bhaji is ready. Garnish with more butter if desired.

    Toast the pav (bread rolls). Heat a griddle on the stove. Slice the pav horizontally, keeping one side attached. Spread a little butter on the griddle, place the pav on it, and toast both sides lightly. Remove to a plate and repeat with the remaining pav.

    Serve the hot and delicious pav bhaji and enjoy.
