Khaman is a very popular and common food/snack in our india specially in Gujrat. Here I have given a twist and made a healthier green Dhokla which is spinach Dhokla.

Khaman is a very popular and common food/snack in our india specially in Gujrat. Here I have given a twist and made a healthier green Dhokla which is spinach Dhokla.
Steps

In a mixing bowl add all ingredients except eno, mix well. Add water to adjust the pouring consistency. Let it rest for 10 mins.

Now grease a plate, and add water preheat the steamer/idli stand. Add eno to the batter, mix it. Transfer this batter to the greased plate.

Put this plate into idli stand, close the lid. And steam it for 12-15 mins or until a inserted knife comes out clean.

In a wok make tempering, heat one tsp oil add and crackle mustard seeds and cumin seeds. Add curry leaves. Add half cup water and one tsp sugar. Mix well.

Cool the ready Khaman, invert on to a plate. Cut into desired shape and spread the tempering all over it. And the healthy spongy and soft spinach Khaman is ready to eat.
