Finally cut all Vegetables as mentioned in the ingredients section

Add 3/4 cup maida (all-purpose flour), 1tsp oil and salt in a large bowl.

Mix all ingredients well and prepare a soft pliable dough (like paratha dough) by adding water as needed. Cover the dough and keep it aside for 20-25

Heat 1 tsp oil in a pan over medium flame. Add finely chopped ginger and garlic and saute for 30 second.add green onion and saute for a minute.

Add all chopped veggies (carrot,cabbage, capsicum and green beans) and salt

Mix well and saute them for 4-5 minutes add 1 tsp chilli sauce

Add 1 /2 tsp tomato sause

Add 1/2 tsp soy sauce, add 1/2 tsp black pepper powder.

Mix well add saute for a minute.turn off the flame.stuffing for veg momos is ready

Knead the dough again for a minute and divide it into 2- equal portion give each portion a round cylindrical.

Give each small portion a round shape like ball and flatten it a little into Pattie by pressing it in between your palms.cover them with a wet cloths or a plate to prevent them from drying.

Place one dough Pattie on a rolling board and roll it out into a thin disc (approx 4-5 inch diamater) roll it from sides and keep the center portion little thick compared to sides.it required, sprinkle some fry flour while rolling

Place approx.1 tsp filling in the center.don't over stuff it otherwise it will be difficult to get a proper "potli"shape.

Lift the edge from one side and start pleating (fold the edge a little inside and little outside alternatively) join them in the center to seal it.

Prepare momos from remaiming dough patties in a similar way

Grease a steamer plate or any other plate (it should easily fit into the streamer or a deep vassel) with oil to prevent them sticking. You can also line a plate with cabbage leaf instead of greasing the surface with oil.arrange veg momos on a plate in a way the there is some space around them to expand.

Heat 1-2 glass of water in a steamer or a deep vessel over medium flame.

Place stand in the steamer and close the steamer cap and then wait for cooked.

Keep the flame to low and fry this momos.

And now transfer them to a serving plate.serve fried momos with chutney.

Now we make a chutney Heat 3 cups in a pan and lit it comes to a boil when the water comes to a boil then add 2 medium and 2 large tomatoes (140g) 3 to 4 dry red chillies in it if you want you can deseed the red chillies before adding them in hot water.

Boil the tomatoes on a medium flame and then cook them for 8-9 minutes then stain the water and allow the tomatoes and red chillies to cool.

When the tomatoes become warm or cool down then slice of the top eye part of the tomato. Roughly chop or crush them and then add in a blender jar along with it's juices also added the red chillies along with a tsp chopped garlic 1/4 tsp black pepper.

Add 1/4 to 1/2 tsp sugar and Salt as per taste. Without adding water, grind or blend to a smooth paste.

Remove the momos chutney in a bowl and serve the momos chutney with veg momos.
