Microwave lemon curd. #mycookbook
This is really quick and easy. Traditional lemon curd takes ages to make, stirring the mixture over a saucepan of boiling water till it thickens, but it takes all of 3 minutes in the microwave! Delicious on toast or scones, also very good as a cake filling or in a lemon tart.

Steps
- 1
Grate the rind from the lemons and squeeze the juice, removing the pips. Put in a bowl together with the sugar and butter and microwave for one minute.
- 2
Beat the eggs really well.
- 3
Pour the eggs into the bowl in a steady stream, whisking the mixture well at the same time. Microwave in bursts of one minute until the curd thickens. It shouldn’t take more than 3 bursts.
- 4
Pot the lemon curd into hot sterilised jars. Allow to cool before putting lids on.
