Ingredients

Serves 4 servings
  1. 4eggs
  2. 5 tablespoonsbutter (about 70 grams), plus 1 small pat (about 10 grams)
  3. 2/3 cupheavy cream (about 150 ml)
  4. 2 3/4 ouncesdried morel mushrooms (about 80 grams)
  5. Chives

Steps

  1. 1

    Soak the morel mushrooms in warm water for 20 minutes. Rinse them several times and trim off any tough ends.

  2. 2

    In a saucepan, melt the small pat of butter and add the morels. Cook for 10-15 minutes.

  3. 3

    Butter small ramekins, add a little cream to each, then crack an egg into each ramekin and add the morels. Sprinkle with chopped chives.

  4. 4

    Bake for 10 minutes at 350°F (180°C). Serve with strips of toasted bread for dipping.
