Ingredients

30 minutes
2 servings
  1. 2 piecessalmon fillets about (400g)
  2. olive oil or butter to fry them in
  3. 1 clovecrushed garlic
  4. salt,
  5. lemon pepper
  6. juice of half a lemon
  7. 1good handful of fresh spinach
  8. mushrooms sliced
  9. 1onion chopped
  10. For the dressing:
  11. 200 gGreek yogurt
  12. chopped chives
  13. fresh thyme,
  14. fresh mint
  15. juice of half a lemon
  16. salt and pepper

Steps

30 minutes
  1. 1

    Rub fillets with salt, lemon pepper and garlic and set aside. Fry onion and sliced mushrooms in olive oil until almost done, add the spinach stir fry gently for 3-4 minutes.

    Now we take our beautiful fish fillets and slowly fry (skin down) in butter/oil turning carefully, this would take about 4-5 minutes.

    Next we prepare our yogurt dressing by mixing chopped mint, chives, lemon juice, thyme, salt and pepper in with yogurt. We are ready to serve.
