Ingredients

1- 1.5 hr
15 samosas
  • 10-12boiled potatoes (mashed)
  • as neededOil
  • 300 gmmaida/All-purpose flour
  • 1 tspajwain/carom seeds
  • 1 tspcoriander seeds (crushed)
  • to tasteSalt
  • As neededWater for kneading & sealing
  • 1 tspcumin seeds/ jeera
  • 1/2 tspchopped ginger
  • 1/4 tspasafoedita
  • 1/2 tspturmeric powder
  • 1 tspred chilli powder
  • 1medium chopped onion
  • 1 tspchat masala
  • 1/2 tspgaram masala
  • 2 tspcoriander leaves
  • 1 cupgreen peas
  • 1 tspchopped cashew nuts (optional)
  • 1 tspchopped garlic
  • 1/2 tspbaking powder

Steps

1- 1.5 hr
  1. 1

    In a big bowl add maida, ajwain seeds, salt, baking powder, lil oil mix well..add lil amount of water(frequently)and Knead a tight dough. Keep aside for 1/2 hr.

    In a pan heat 2 tsp oil add asafoedita, jeera,and coriander seeds, fry until aromatic add chopped ginger,garlic and onions cooked till translucent add turmeric, chili powder, chat masala, garam masala saute well.

  3. 3

    Now add peas and mashed potatoes roasted well untill becomes lil crusty add salt and coriander leaves keep aside.

  4. 4

    Now take samosa dough Knead again (remove air bubbles) cut with equal portions of small ball. Roll it and make slightly thik Puri cut into half and make cone shape.

  5. 5

    Fill with stuffing and cashew cover the edges with lil water and seal it. Make them all like this.

  6. 6

    Now pour the kadai with sufficient amount of oil and heat it properly dip the samosas into oil one by one and deep frying on medicine heat until golden brown color.

    Take them on kitchen paper and serve hot with green chutney or tomato ketchup. Taste is yummy 😋
