Pork Thigh Empanadas 😋😋 Chopped by Hand

Days that call for it! Filled with sunlight and joy at home with my 11-month-old son. Aromas that bring back lovely memories, why? Because at every family gathering, with friends, or any special event, food is always involved, and I say this with good intentions... It's lovely, delicious, gives a sense of home, and conveys affection. All of that, which words fall short of expressing, we convey in a simple act of cooking. So I got up and gathered what I had in the fridge and pantry and made some delicious little empanadas for my kids/husband. Here I share the recipe with you.

Steps
- 1
Start by chopping each of the vegetables to your liking and set them aside. It's also important to chop the meat as finely as possible.
- 2
In this step, begin by sautéing the garlic and onion, then add the green bell pepper, red bell pepper, and a pinch of salt to help them release their juices. I also added a bit of paprika for color.
- 3
When the vegetables start to turn translucent and soften from cooking, add the meat. Mix well, add oregano or seasoning as desired, and cover to let the heat do its work for a few minutes, keeping an eye on it.
- 4
Once cooked to your liking, just before finishing, add the black pepper, chopped hard-boiled eggs, and chopped olives. Let it rest to cool slightly so the filling doesn't spoil the dough.
- 5
And there you have it, voila! The pork thigh filling is ready.
- 6
Time to fill the dough, and once they're ready, enjoy them.
