Soak the soya chunks in hot boiled water for 30 minutes.

After 30 minutes, squeeze the water from soya chunks, and coarsely blitz it in a grinder.

Heat a pan. Add 1 teaspoon oil in it. Now add half of the finely chopped onion, 1 teaspoo n ginger garlic paste in the pan. Stir it and add salt as per taste, 1/2 teaspoon paprika, 1 teaspoon coriander powder. Give it a stir, add 1 spoonful of tomato paste.

Now add the soya mince. Add 1/2 teaspoon lemon juice. And keep stirring it on medium heat for couple of minutes. Transfer it to a bowl and let it cool.

In a bowl, mash the potatoes. In a pan, heat oil, and again add rest of the finely chopped onion. Put salt, paprika, coriander powder.

Now add the mashed potatoes and half teaspoon lemon juice. Stir it till the potatoes start looking golden brown. Transfer it in a bowl

Cut the top of the bellpeppers and scoop the seeds out. Now gently stuff 2 bell peppers with soya mince mixture and 2 with potato mixture. With each spoonful press it gently so the mixture is nicely set and doesn't come out.

Heat 1 tablespoon oil in a pan, and put the stuffed bell peppers. Cook on medium heat. Flip them occasionally so they are evenly cooked.
