Remove the skin from the chicken.

Peel the carrots and onion.

Trim the roots from the leek, remove the outermost layer, and separate the white part from the green part. Wash it to remove any dirt, especially from the green part.

Wash the celery stalks well, including the leaves, and cut them into 2 or 3 pieces so they are not too long and fit well in the pot.

In a large pot, place the chicken along with the peeled carrots, leek, celery stalks, and onion, with enough water to cover them generously and a teaspoon of salt. Turn the heat to high, and when it boils, lower the temperature to a gentle simmer. Skim off any foam that forms on the surface with a skimmer, as it contains impurities from the meat and vegetables.

Cook everything together for 1 hour from the time it starts to boil, with the pot covered.

After the time has passed, use kitchen tongs to remove all the solid ingredients to a separate plate.

Taste the broth to see if it needs more salt, strain it, and set it aside.

Now you have the chicken broth ready to make the soup. Puree the vegetables to make use of them, and you can make a vegetable cream or puree. Chop the chicken into small pieces.

Put the amount of broth you need in a pot over high heat to bring it to a boil. When the broth is boiling, add a tablespoon per person of the pureed vegetables and the pasta. Lower the heat slightly. Cook the pasta for the time indicated by the manufacturer.

A few minutes before it's done, add the shredded chicken, grate the hard-boiled egg, and sprinkle with a bit of chopped fresh parsley.
