Place a bowl on a scale. Combine sugar, salt, baking powder and corn starch. Then add the cake flour until the total weight is 200 g.

Mix with a whisk very well and it's done!

I make 2-3 bags of pancake mix and store it in Ziploc bags. Use it up before the moisture gets in them.

Combine 200 g pancake mix, 1 egg, 150 ml milk, and 5 drops of vanilla oil. They're fluffy and comforting.

Mix 200 g pancake mix, 1 tablespoon of sugar, 1 egg, 2 tablespoons of milk, 20 g melted butter, and 5 drops of vanilla oil. Deep fry in 340°F/170℃ oil. It's crispy on the outside and soft inside. A classic snack!
