Boil arbi for 10 to 15 minutes. Remove the skin and cut them in small pieces

Make all the spices, ginger garlic paste and cumin fenugreek seeds ready.

Now heat oil and add the masala mix and add some water so that they didn't get burn or cook well. Cook until the oil separates from masalas.

Add boiled arbi and tomato cubes and some water to adjust consistency of the salan. Mix well. Add Coriander leaves and serve hot with chappati.
