Pork and Shrimp Dumpling Soup

Let's make dumplings together! I've experimented with dumpling filling recipes many times and finally found this one that I love. It's similar to the dumplings from Jit Phochana noodle shop but less sweet. This recipe includes coarsely chopped shrimp, which adds a nice aroma.
Tips:
1) Use ground pork with a good amount of fat for a delicious and tender dumpling filling.
2) Use thin dumpling wrappers to create beautiful wrinkles when cooked, making them more appetizing.
3) If you like a strong sesame oil aroma, feel free to add more and include chopped green onions. Marinate for at least 30 minutes.
4) When boiling dumplings, wait for the water to boil, then add the dumplings and stir gently over medium to high heat. Avoid a rolling boil to prevent the dumplings from breaking. Cook for 3 minutes, and they will be perfectly done if the filling isn't too large. The wrappers won't become mushy.

Chop the shrimp coarsely to about the size of a green pea and set aside. Choose ground pork with a good amount of fat.

Mix all ingredients in a mixing bowl, except for the green onion. Stir until well combined and sticky. Microwave a small portion to taste and adjust seasoning as desired. Then add chopped green onion, mix well, cover with plastic wrap, and refrigerate for at least 30 minutes or overnight for best results.

When ready to cook, place the filling in the dumpling wrappers, ensuring no air is trapped inside, as this can cause them to puff and possibly burst when boiling.

Boil the dumplings in boiling water, but avoid a vigorous boil. Cook the dumplings for about 3-3.5 minutes, then remove and drain. They're ready to enjoy!

You can add them to noodles or make dumpling soup. This recipe has a delicious and aromatic filling.
