Whole Wheat Penne with Vegan Pesto - Almonds, Cherry Tomatoes, and Arugula

Hi everyone! I really enjoy changing things up and especially experimenting (my family now feels like they're judges on MasterChef 😆😆😆😆😆). Yesterday went great—with this vegan pesto, made fresh with almonds and cherry tomatoes, I got top marks from everyone 🤩🤩🤩🤩🤩!

Start by preparing all the ingredients. Then, in a food processor, blend the almonds until they become a fine meal. Add the cherry tomatoes, olives, garlic, salt, and pepper. Blend again.

Now add the arugula and olive oil, and blend everything together.

Once you have a creamy mixture, the pesto is ready to use.

This pesto is delicious served with pasta, either hot or cold. It's also great for baked pasta dishes, lasagna, cannelloni, or as a spread on bruschetta.

Today I decided to serve the pesto with whole wheat penne. Boil the pasta in plenty of salted water, drain it al dente, and toss with the pesto. Enjoy!
