Flatten the chicken breast to a thin slice. Sprinkle salt and pepper on both sides of the chicken. Coat all sides of the chicken thinly with katakuriko. Fry the chicken with the skin side down.

Combine the ginger, soy sauce, mirin, sake, sugar and water.

Fry both sides of the chicken and add the mixed seasonings. Cook over a low heat. When both sides of the chicken absorbs the flavor it is done.
