Tawa pulao as you all know is the popular street food of Mumbai, just made a slight twist to this lip smacking dish with the addition of Cauliflower in abundance.
It's a lovely one pot meal from Maharashtra State and is well received by food lovers across the Country. In this particular version, I have used Cauliflower exclusively. The entire process and the recipe remains authentic. My family simply loves this variation by me along with my close associates and besties as well. Heat butter plus oil and add the chopped onion, green chillies and the ginger garlic paste. Saute them for about 2 minutes.

Add the tomatoes now along with the pav bhaji masala and the rest of the spices. Saute until absolutely soft and mushy. Add masalas or spices according to your family's preferences. You can always increase or decrease. Mix and leave it on well covered for about 5 minutes.

After the tomatoes get cooked, add the green peas and the cauliflower florets. Cover and cook until done. Do not over cook them. Maintain their crunch for a lovely meal. Alternatively you can boil cauliflower and green peas in salted water for about 4-5 minutes and add. Keep stirring in between.

After about 5 minutes, add rice to it. Give all a good mix and garnish with chopped coriander leaves before you serve and a dash of lemon juice if desired. If you are using leftover rice, then cover with a lid and allow to get heated for further 5 to 7 minutes before you serve.

The beauty of this dish is that you can make use of leftover rice so well. And it's always a good idea not to waste food. However freshly prepared rice can also be used as per your convenience. Enjoy it steaming hot with raita and salad. Yum!
