Ingredients

4 servings
  • 800 gmoscardini - cleaned, ask your fishmonger
  • Clovegarlic
  • Fresh chilli to taste
  • Small glass of white wine
  • 300 mlpassata sauce
    Passata di pomodoro
  • 10-12chopped cherry tomatoes
  • Pinchsalt
  • Fresh parsley and black pepper to serve
  • Olive oil

    Rinse off the moscardini, set a side. Heat a generous amount of olive oil in a pan. Add the chopped garlic and chilli. Cook for 1 min. Now add the moscardini and cook for another min or so. Add the wine and let it evaporate

    They will release their natural water. So don't worry if it looks very liquid. Now add passata and tomatoes. Stir and simmer for about 45 mins.

    Season with salt and pepper and top with fresh parsley
