This was my first time cooking scallops at home and I’m really pleased with how they turned out! The sauce is lovely and lemony but still the sweetness and flavour of the scallops shines through.

This was my first time cooking scallops at home and I’m really pleased with how they turned out! The sauce is lovely and lemony but still the sweetness and flavour of the scallops shines through.

Pat the scallops dry on a sheet of kitchen towel. Season with salt and pepper. Make sure you have the rest of your ingredients to hand as it’s a quick dish.

Heat a non stick frying pan until it’s really nice and hot. We want to get a nice sear without overcooking the scallops.

Put your oil in the pan then put your scallops in, largest first working your way down to the smallest. You want them to sizzle as you put them in.

Start your timer for 5 minutes.

Cook for 2-3 minutes on each side depending on how large your scallops are. Your timer will help you track the cooking time, even if you need a bit more or a bit less time.

Take the scallops out and put them on a plate to one side. Turn the heat down and gently fry your garlic for a few minutes until fragrant.

Add the stock and use a spatula to scrape up any brown bits from the pan. Bring up to the boil and reduce by half.

Now stir in one tbsp of lemon juice and taste it here. Add more according to taste.

Once the pan sauce has thickened up, add your scallops back in for a few seconds just to heat them through again. Sprinkle with parsley and serve.
