Wash and soak basmati rice for 30 minutes, then sieve and air dry basmati rice.

Now coarsely ground the rice. From 1 litre milk take some milk and mix it with grounded rice and make a mixture.roast the green cardamom and make power.

Now in a pot add milk bring it to boil,then add rice and green cardamom powder,saffron and allow it to cook on low flame,till the milk is reduced to half and rice is completely cooked.

Now add sugar and kewda water and cook for another 5- 10 minutes,keep stirring continuously or your phirni will stick to the bottom.

Once the phirni is done pour it in earthen cups,garnish with saffron and chopped pistachios allow the phirni to cool at least 5-6 hours before serving.
