Chocolate mochi cookies is a popular Korean snack.

Unlike basic cookies, mochi cookies are much chewier with a crunchy cookie crust wrapped with smooth, stretchy mochi (rice cake) inside.

Ingredients

  1. For the mochi
  2. 70 gglutinous rice flour
  3. 20 gcorn starch
  4. 15 gsugar
  5. 140 mlmilk
  6. 15 gunsalted butter
  7. For the cookie dough
  8. 90 gunsalted butter
  9. 90 gbrown sugar
  10. 1egg
  11. 180 gplain flour
  12. 20 gcocoa powder
  13. 2 gbaking powder
  14. 50 gchocolate chips

    Make the mochi. In a large bowl, add in glutinous rice flour, corn starch and sugar, mix well.

    Slowly stir in milk to incorporate with flour mixture.

    Steam the mochi for 30 mins.

    Add in butter and mix with the steamed mochi. Keep folding until the dough is smooth. This takes around 10mins.

    Wrap with cling film right on the surface of the mochi. Keep it chilled in the fridge for 1 hour.

    While the mochi is chilled in the fridge, make the cookie dough. In a large bowl, add in unsalted butter and soften them with a whisk.

    Add in brown sugar in 3 separate times. Mix thoroughly.

    Add in 1 egg then mix well.

    Sift in plain flour, baking powder and cocoa powder.

    Use cut-and-fold technique to mix the batter. Wrap with cling film and keep the dough chilled in the fridge for 30 mins.

    Make the mochi cookies. Roll the mochi into 10g balls.

    Roll the cookie dough into 20g balls.

    Flatten the cookie dough, place the mochi ball in the centre and wrap it. Roll the dough then flatten it.

    Place chocolate chips on top of the cookies.

    Bake in a preheated oven at 190°C for 12-15mins.

    Place the baked cookies on a cooling rack and let them cool for 5-10mins.

    Serve the cookies with a cup of fresh milk. A perfect combination!
