I checked out a wonderful pasta homepage and was inspired by the recipes listed there. The recipe on that site is of course easier to follow, though.

Make sure not to skimp on the dusting flour!! It's difficult to roll out, so I suggest buying a pasta machine. That way, you can brag about having a pasta machine at home. Recipe by Tetsuya0024

Ingredients

2 servings
  • 100 gramsCake flour
  • 100 gramsBread (strong) flour
  • 2Eggs
  • 1 dashOlive oil
  • 1 dashSalt

Steps

  1. 1

    Sift the cake and bread flour. A sieve or mesh colander should work.

  2. 2

    Crack in 2 eggs. It's bad of the shell falls in, so I suggest adding cracking them into a different bowl before adding them. (A rare piece of good advice from me!!)

  3. 3

    Knead. It might not seem like it will come together properly, but keep at it.

  4. 4

    Add a bit of olive oil and salt once to comes together a bit.

  5. 5

    Keep kneading. Give it a punch every now and then. It's go to go once you can press it with your finger and the dough springs back. It should take about 10 minutes up to this point.

  6. 6

    By now, you should have developed some affection for this ball of pasta dough.

  7. 7

    Wrap it in plastic wrap and let it sit for 1-2 hours.

  8. 8

    Dust with cake flour, and roll out with a rolling pin. There are no rules. Spread it thinly enough so that you can see your hand through the dough.

  9. 9

    Cut the noodles to your preferred thickness and length.

  10. 10

    The task of rolling out the noodles will make you want a pasta machine.
