Easy Crockpot Chicken Noodle Soup
A simple homemade chicken noodle soup with tender chicken, vegetables, egg noodles, and plenty of flavor. Great for soup season!

Steps

Sear chicken breasts on both sides in the cooker until golden brown.

Chop carrots, celery, and onion into even pieces.

Add vegetables and garlic to the cooker with chicken. Sprinkle in herbs, spices, and salt.

Pour in chicken broth and 2 cups water.

Cover and cook on LOW for 2 hours, until chicken is cooked and vegetables are tender.

Remove chicken, shred with forks, and return to soup.

Stir in 1 teaspoon soy sauce. Taste and adjust seasoning or add more water if needed. Switch cooker to HIGH.

Boil egg noodles in a separate pot for 5–6 minutes, just underdone. Drain.

Add noodles to soup and cook for 3–5 minutes until tender.

Taste and adjust seasoning. Switch cooker to WARM or OFF to prevent overcooking.
Tips
If you’re planning on having a lot of leftovers, you can cook the egg noodles completely and store them separately from the soup. Add noodles to individual bowls before ladling the hot soup over them. This keeps the noodles from absorbing too much broth and becoming swollen or mushy overnight.
