Weigh all the ingredients.

Separate the egg whites from the yolks. Use half of the sugar to make a French meringue with the egg whites, and use the other half to beat with the yolks until light.

Gently fold the yolks into the egg whites, alternating with the flour. Mix carefully, then bake at 350°F (180°C).

Trim the cake to even it out, then soak it with the three milks mixture.

Add the filling.

For the filling, melt the chocolate in a double boiler and add the whipped cream.

For the three milks mixture, bring evaporated milk, sweetened condensed milk, and whole milk to a boil with a cinnamon stick.

Decorate the cake.
