Ingredients

30 minutes
  1. For wrapper...
  2. 1 cupAll-purpose flour /Maida
  3. 1 tbspoil
  4. 1 tspsalt
  5. 1/4 cupwater or more as required
  6. For stuffing..
  7. 2 cupfinely chopped vegetables (cabbage, carrot, beans, capsicum
  8. 1/2 cupsoaked soya granules
  9. 1/4 cupfinely chopped onion
  10. 2 tbspfinely chopped ginger-garlic
  11. as per tasteFinely chopped chilli
  12. as per tasteSalt
  13. 1 1/2tsp soya sauce
  14. 1/2 tspvinegar
  15. For momos chutney..
  16. 2tomato
  17. 2red chilli
  18. 1kasmiri mirch
  19. 6-7garlic cloves
  20. as per taste Salt
  21. 1/2 tsppepper powder
  22. For soup...
  23. 2 cupwater
  24. 1/2 cupmix chopped vegetables of your choice
  25. 1/2 tspfinely chopped garlic
  26. 1/2 tspchopped chilli
  27. 1 tbspcornflour
  28. as per tasteSalt
  29. 1 tspsoya sauce
  30. 1 tspsugar
  31. 2 tsptomato ketchup
  32. 1/2 tspvinegar

Steps

    Firstly for the wrapper, bring the water, salt and oil to a boil. When it starts bubbling, add the flour.
    Cook this for 30 seconds and then transfer to a working counter. It will be hot. Bring it all together, rest for 20 minutes and then keep covered with a muslin cloth.

    Meanwhile for stuffing, heat 1tbsp oil add chopped ginger-garlic and chilli, saute on high flame. Further add all the finely chopped vegetables, soya granules, salt, soya sauce and vinegar. Cook for 3-4 minutes or till the moisture of vegetables evaporated.

    Further, pinch a small ball sized momos dough, flatten it and roll using a rolling pin. Roll to almost medium thin circle, around 4 – 5 inch in diameter. Make sure you roll from sides and keep the centre slightly thick.
    Now, place a heaped tbsp of prepared stuffing in the centre.
    Now shape the dumplings, you can shape as per your choice.

    Heat steamer and arrange the momos in the tray without touching each other and steam for 10-12 minutes.

    For chutney, in a pressure cooker and tomato, red chilli, kasmiri mirch, garlic cloves and 3-4 tbsp water. Cover and cook till 2 whistle. Allow cooker to be cool completely. Take out everything from cooker and grind it to smooth. Add salt and pepper powder mix well.
    Chutney is ready.

    For soup, In a pan heat water, further add chopped ginger-garlic and vegetables. Cook it for 5-7 minutes. Now add cornflour slurry (mix cornflour and water)
    Stir continuously, add salt, pepper powder sugar, soya sauce and tomato ketchup. Stir and simmer for 4-5 minutes.
    Soup is ready.

    Serve hot Momos with hot soup, chutney and schezwan Chutney.
