I had some forgotten chocolate and a few old eggs, so I thought, “Don’t throw it away—make something delicious!” That’s how I finally tried making brownies, something I’d wanted to do for a long time. Cut the chocolate and butter into pieces and place them in a microwave-safe bowl. Microwave for 1 to 1 1/2 minutes, or until melted. Be careful not to burn the chocolate!

In a large bowl, add the eggs, sugar, vanilla, and salt. Beat with a hand mixer for 2 to 3 minutes, until creamy.

On low speed, add the melted chocolate mixture to the bowl.

Add the flour and gently fold it in with a spatula.

Pour the batter into a greased 9x9 inch (23x23 cm) baking pan. Bake at 350°F (175°C) for 40 to 45 minutes, testing with a knife or toothpick for doneness. If making muffins, this recipe makes 24; bake for 20 to 25 minutes.
