Today I made tasty and delicious Rasmalai sweets for Diwali Festival.
Steps

Take milk in a pan and boil it. When the milk boiling turn off the flame. Take some lemon juice, add some water,vin it and then put the mixture in the boiling milk gradually to curdle it. Take a big bowl, place a strainer in it, and keep a coton cloth on it. Then put the curdle milk in it and wash it properly. Then squeeze it and tie it, keep it for 30-40 minutes.

Then mash the chhena and knead it with palm and add some maida in it and again knead it for 5-6 minutes. Then make small flat balls of chhena.

Keep a pan on flame, put sugar and water and keep it for boiling. Then put chhena balls on the boiling water and boil it for 20 minutes on high flame.

Then put rasmalai balls in a bowl for 1-2 hours till it comes at room temperature.

Making Rabri -
Boil the full cream milk to make it thick then put sugar, saffron milk, cardamom powder and chopped dry fruits in it.and boil it once again some times. - 6

Then put the ready rasmalai balls in the boiling milk and let the milk boiling for 5-6 minutes and then turn off the flame.

Let them to come at room temperature and keep it in the fridge for 2-3 hours and serve chilled Rasmalai. Garnish with Pista and rose petals.
