Easy Sakura Mochi (Domyoji) Using A Microwave Steaming Container

Based on a recipe I got from a shop, I thought sakura mochi would turn out softer if I made it in a microwave steaming container. That's how I came up with this recipe.
Adjust the amount of red food coloring to desired color.
The amount needed varies depending on the brand.

Cooking Instructions

Soak the cherry leaves in a bowl of water to remove excess salt (about 30 minutes).

Divide the smooth sweet bean paste into 12 equal portions.

Put the domyoji-ko and sugar in a microwave steaming container. Add the water a little at a time while stirring the mixture.

Add the red food coloring and mix. (Mix well or else the color will be uneven.)

Cover with a lid and microwave for 4 minutes at 600 W. Let sit with the lid on for about 10 minutes.

Meanwhile, take the cherry blossom leaves out of the water, and pat dry them with a paper towel.

After 10 minutes, the mochi dough should look like this. (This photo was taken after I stirred the dough.)

Divide the dough into 12 equal portions.

Flatten the dough balls, shape them into ovals, and wrap them around the balls of smooth sweet bean paste.

Wrap each sakura mochi with a cherry blossom leaf, and they're done.

It's easier to handle or shape when chilled. Measure exact tablespoons of adzuki bean paste for quick measuring and suitable amounts. Scoop the bean paste with a spoon, wrap it in the mochi rice, then wrap each in a cherry leaf. This should be done in one go. Store the leftover adzuki bean paste in a plastic bag in the freezer; flatten it and score with lines to separate into tablespoon portions. Freeze it until required. I have learned how to make sakura mochi, but I didn't have rice flour, domyoji flour, or a cherry blossom leaf...I wanted to make a sakura mochi easily, so I came up with this recipe.-A little amount of the red food colouring is enough to turn the rice pink, so don't add too much. If you add too much, the rice turns red.-A pinch of salt gives the rice a salty kick, and it will taste like the authentic sakura mochi.
