Based on a recipe I got from a shop, I thought sakura mochi would turn out softer if I made it in a microwave steaming container. That's how I came up with this recipe.

Adjust the amount of red food coloring to desired color.
The amount needed varies depending on the brand.

Ingredients

12 servings
  • 150 gramsDomyoji-ko (Japanese coarse rice powder)
  • 2 tbspSugar (granulated)
  • 220 mlWater
  • 1/2 tspRed food coloring
  • 180 gramsSmooth sweet bean paste
  • 12Cherry leaves preserved in salt

Steps

  1. 1

    Soak the cherry leaves in a bowl of water to remove excess salt (about 30 minutes).

  2. 2

    Divide the smooth sweet bean paste into 12 equal portions.

    Put the domyoji-ko and sugar in a microwave steaming container. Add the water a little at a time while stirring the mixture.

    Add the red food coloring and mix. (Mix well or else the color will be uneven.)

  5. 5

    Cover with a lid and microwave for 4 minutes at 600 W. Let sit with the lid on for about 10 minutes.

  6. 6

    Meanwhile, take the cherry blossom leaves out of the water, and pat dry them with a paper towel.

    After 10 minutes, the mochi dough should look like this. (This photo was taken after I stirred the dough.)

    Divide the dough into 12 equal portions.

    Flatten the dough balls, shape them into ovals, and wrap them around the balls of smooth sweet bean paste.

    They should look like this.

    Wrap each sakura mochi with a cherry blossom leaf, and they're done.
