I think this might be the quickest recipe I’ve shared to date - perfect for a quick lunch or light fresh dinner in summer. It only takes as long as the pasta takes to cook.

I think this might be the quickest recipe I’ve shared to date - perfect for a quick lunch or light fresh dinner in summer. It only takes as long as the pasta takes to cook.

Cool the pasta according to the packet instructions. Be sure to add a bit of salt to the cooking water. While it’s cooking, make some 5 minute pesto

Once the pasta is cooked, drain the water, reserving a little bit of the water in a glass or cup.

Transfer the cooked pasta to a bowl. Add 1/2 a portion of the pesto, a splash of cooking water and mix everything together to coat the pasta
- 4
Add chopped tomatoes and rocket if you like, plus a little seasoning and enjoy warm or cold.
