Thai-style omelette soup with pork balls

One of my favourite go-to dishes when I'm in the mood for soup. Full of protein with an aromatic soup from Thai-style herb mix in the pork ball simmered to the soup.
Small tips to get the right taste of this soup is the mix of garlic+coriander+pepper in the pork balls, fish sauce in eggs, and soy sauce in the soup. (Please avoid seasoning substitution) Fish sauce is the must for omelette but never use it with the soup.

Thai-style omelette soup with pork balls

Mix minced pork with finely chopped garlic, chopped coriander and ground white pepper (black pepper is fine), then season with oyster sauce and soy sauce. Marinate around 10 min.

Bring water to a boil. Use spoon and ladle to make the roughly round pork ball. Boil until cooked while gently removing the stains with ladle to get clear soup.

Season with soy sauce, rock salt and pepper.

Beat the eggs and whisk well. Season with fish sauce. Heat the oil in a nonstick pan with medium to high heat. Make sure the oil is hot enough by testing with a small drop of eggs, it should become bubble. Pour the egg evenly. Wait until the underside becomes golden then flip. Cook evenly on both sides then turn off the heat.

Cut roughly into small squares with a flipper on the pan. Pour it straight to the boiling soup with pork balls (Also put the remaining oil from the pan if any as it help with the taste). Stir well and turn off the heat.

Serve with roughly chopped spring onions and corianders and pepper.
